Years ago, my all time favorite recipe to make for any special occasion was Paula Dean's French Toast Casserole. Christmas morning, Baby Shower's, Bridal Party's, Easter Brunch, the list goes on. Shoot, I would even invite a family over on a Saturday morning just to make it!
Unfortunately, after adopting a grain-free lifestyle, we were no longer able to enjoy this special treat. Typically, I try to find some kind of replacement for family favorites, but I never found a "paleo" bread that had the right consistency to be worthy of a stand in... until now.
I recently came across Zenbelly's Everything Dough and immediately purchased it for the cinnamon roll recipe. Not only were they moist and chewy, but more importantly they WEREN'T dense bricks or biscuit-like, like most of the grain-free or paleo recipes I'd tried previously. The creator of the dough recently came out with a 2.0 version with an update for Chocolate Babka and for some reason my brain instantly thought, "I CAN MAKE THAT INTO CINNAMON BREAD!". And from there, it transformed into my beloved, long-lost French Toast Casserole.
I am SO making this for Easter Brunch.
